There's a lot of vegans, gluten-free, sugar-free.

Sugar-free is the new gluten-free.

So you have to take that all into account.

Sometimes the food is scripted.

If they're supposed to be eating meat and they're vegetarians, you've got to come up with something that will look like meat.

And then you've got to also make sure that...

it's not on their plates too long.

So you put the food out, they'll light, they'll move, and they'll do a few takes.

You might have to replace the plate.

Say it's a restaurant, and the waiter comes in the middle of the scene and puts down the food, then you're going to need to do a fresh plate every single take.

And that can be a nightmare.

So you always hope...

Mid-meal.

Mid-meal is great because then you can just top up.

You're eating the green beans.

Let's just put a few green beans and then you'll change the whole plate every 40 minutes or so.
