So I had a checking account when I was really young.
And you couldn't just go to a party that night and not feed your sheep.
You had to take care of them.
So where we get into that for, and my parents are rangers in North Texas, you can't leave your herd.
And John and I really wanted a lifestyle that would allow for us to travel someday.
So we consciously made the decision that we weren't going to be cheesemakers.
And even kind of running that grilled cheese club out of our house, we realized we're more front of the house than back of the house, if you will.
Yep.
So back of the house, often being chefs and cheese makers, people who like to create, they're really into that science part.
They like to put their hands in.
They don't necessarily gain energy from talking to other people.
In fact, that drains them.
John and I are the exact opposite.
We wanted to be out of the kitchen.
We wanted to be talking to all of our guests.
Yes.
And we would start telling in this grilled cheese club the stories of how this cheese was made, and who made it, and why they made it.
And it's because their kids were allergic to cow's milk, and they couldn't get any goat's milk.
So they bought a herd of goats, and then they had a surplus of goat's milk.
And so then they started making cheese.
