So I was in First it was with Jason Atherton In Pollen Street Social It's gone now Closed it there last year So I was there I was there first Was Ross there when you were there?

Ross Ross Bryans was my head chef at the time Why don't you think I ate there when you were there?

That's what sort of Sealed the deal I was actually going over I had a job in the Clove Club With Isaac McHale That's what made me go to London I went over I went over for a meal When Clove Club first opened And then That changed everything I ate there And I was like

Dear God, it was just different kind of tasting menu.

There was no tablecloth.

It was kind of, for me, it was the first time seeing it was cool.

Young lad served me.

I got a cider as one of my parents and chefs came to the table.

I'd never seen that before.

I was like, and the kitchen was open, like it was tiny.

And I was like, it blew my mind.

I just loved every second.

And then I organized a trial, went over for one day and that changed.

For me, that changed everything for me, that one trial.

And, like, I went back.

I was working at Gibbo's at the time.

And I went back and I seen Ciarán Glennon.

And I was telling him about it.

I had left.
