Every year, I nearly feel how long I was over there wasn't enough.

So I had another year to make it sound more impressive.

But yeah, I think I was over there about seven, eight years.

That's what sort of Sealed the deal I was actually going over I had a job in the Clove Club With Isaac McHale That's what made me go to London I went over I went over for a meal When Clove Club first opened And then That changed everything I ate there And I was like

Dear God, it was just different kind of tasting menu.

There was no tablecloth.

It was kind of, for me, it was the first time seeing it was cool.

Young lad served me.

I got a cider as one of my parents and chefs came to the table.

I'd never seen that before.

I was like, and the kitchen was open, like it was tiny.

And I was like, it blew my mind.

I just loved every second.

And then I organized a trial, went over for one day and that changed.

For me, that changed everything for me, that one trial.

And, like, I went back.

I was working at Gibbo's at the time.
