Ciarán Glen was doing it before, it was cool.

But yeah, that changed it for me.
And this sort of, we sat down for staff food and this, that and the other.
And that was like, I couldn't, I was like, what's going on here?
Like, it was just, yeah, it was cool.
When I was in Gibbo's, it was hardcore, it was brilliant, it was professional, it was everything you wanted to be.
But then I went over to sort of Clove Club and I could see an evolution of what suited me.
So that was, yeah, so I was over there.
I started with Jason.
Then after a couple of years then, I went to a restaurant called The Ninth with Jun Tanaka.
We just opened it and I spent then the next sort of five years with him.
