There are the your the favorite things that you're gonna wanna try it out for events and and and chefs tend to, you know, uh and and and like there's a salad with a natto dressing with just super delicious.

I mean really delicious, but you have to have and I think I brought much of I I make my own mayonnaise because you know I was in Belgium, but sometimes you want shelf stable

Mayonnaise, you know, and I hate

Am I allowed to say that?

I hate poopy.

So but mozzanel mayonnaise is organic, maybe not certified organic, but you know, very well made and and um I didn't grow up with mayonnaise and so that's why I I don't didn't buy it until I and I made it.

But um

The Japanese mayonnaise my matsa on and then chopped up natto and some other I can't remember what else is in it.

And it's on a like a l iceberg lettuce type of salad.

And that's from my friend um Haramik Kawaguchi.

That she's a nun, uh a Zen nun in uh Okayama.

Um those kind of like eighties.

Kind of like

Town food type of dishes, those are they ex they surprise you.

Well and so I I I loved those because they were nothing that, you know, after I wrote the the the Fidon book, which was, you know, a lot of Haramisan's uh

at work and and a woman in in Iwate who was like

eighties year old grandmother, but she's had a really good touch with her food.

Um he's like, Why'd you write a book about town food?

And I was like

I write about a genre.
