Trevor Moran, and he has a restaurant, a Japanese restaurant, oddly enough.
So it's an Irish man in Nashville cooking Japanese food called Locust, and it's incredible.
So Trevor was in Noma before, and there's another ex-Noma chef who has a restaurant there.
The name is Catbird Seat, and Trevor worked there as well.
So there's that kind of high-end, really interesting dining, and then the really cool sort of food markets.
But I just think for the variety,
And the unexpected nature of it.
It's incredible.
I was in Peru and I wasn't surprised that the quality was incredible, but just the variety again, like now I ate ceviche every day and it was just the sort of the giant corn kernels they have that are so sweet that go in them.
I was slightly worried I was going to come home with mercury poisoning.
Like after my Japan trip, I couldn't stop eating the raw fish.
But, you know, the pisco sours and then walking down the street.
Pisco sours, if you haven't had one.
Oh, they're so good.
They are divine.
They're just amazing.
I really followed my nose on that trip and was ordering stuff off the street.
