Yeah, so junmai means literally means pure rice.
So remember we talked about four ingredients, rice, water, yeast, koji.
So the sake, in order to be called sake, you have to have those four ingredients.
But there are times when the brewers say,
uses this added alcohol, which is distilled alcohol.
This is not to boost up the alcohol level, but it's more used as ingredient.
So by adding spirit alcohol, sometimes it changes, the note might become more,
bright or some maybe the flavor becomes more crisp but they use it brewmaster uses it to to balance that but when those are added you no longer call it junmai so when you see the junmai sake means it's only made with that four ingredients but then junmai ginjo or daiginjo
So those are related to the sake milling rate.
So more the rices are milled down, then you have a more like a brighter note, like aromatic sake, like we were tasting earlier.
