And then after some time, they harvest the cells, have them undergo fermentation, then they dry them out and mill them into cocoa powder.

Yeah, it's definitely more efficient.

So for example, Celeste Bio, which is an Israeli food tech startup backed by Mondeleese International, the company that owns Cadbury.

So they say their process takes just one or two beans to produce the same amount of cocoa butter that would traditionally take four tons of cocoa and ten thousand square meters of land, which is just mind blowing.

So in April this year, Celeste used their lab grown cocoa to make cocoa butter, which they then used to produce about a dozen chocolate bars at Cadbury's Bourneville factory in the UK.

These were just prototypes though, they weren't for sale.

The company says they're aiming to release lab-grown chocolates to consumers sometime next year.

And that's around the same timeline that other companies in the space are kind of working towards as well.

But there are some downsides to lab-grown chocolate that I like to mention too.

So even though cocoa farming can sometimes be exploitative, I mean I'm sure you've heard of the issues with child labor and dangerous working practices.

This farming is still really important to many smallholder farmers in West Africa.

There are roughly six million people who depend on cocoa farming for their livelihoods.

And these are people who already live in poverty.

So lab grown chocolate could really aggravate this by stealing their livelihoods.

This is also fascinating, Tristan.

But what I wanna know is can I use this protocol, say tonight to get some good dreams?
