I use it for a couple specific things.
And I probably use it the most for this.
Well, let me tell you how I've been using it.
So
All you do is you take polenta, which is fine cornmeal, and you combine it with water and salt and pepper.
And now the pepper at this stage is very important because what happens in a pressure cooker is it infuses everything with the flavor of what you're adding to it.
It's why I also like to make congee in my Instant Pot as well.
And so, yes, you can make this on the stove and it will be delicious.
If you don't have an Instant Pot, you can absolutely do this on a stovetop.
But what I love about it is I just throw in my water, my salt, pepper, my polenta.
I close the lid and I just let it go.
And then the other thing is it keeps it warm if I need more time because I think it only takes about 10 minutes on high pressure, something pretty quick.
And so while that is happening, I might saute some greens to your point, saute some mushrooms.
I love mushrooms and polenta.
Or I might have a braised meat that I'm reheating or that I'm serving at a dinner party like braised short ribs because polenta and short ribs go so well together.
But I think it's really both about the technique and the ratios here.
After your polenta cooks is when you add all this parmesan or pecorino or a combination of both.
And then you whisk it all together.
And you also, I believe, add a little bit of butter.
But there's no heavy cream.
