And it does make it more involved.

No one's pretending it doesn't.

But just in the past few months, I've had two kind of big egg salad moments.

One...

I was hired to cater this luncheon and they wanted an array of sandwiches.

And I made this egg salad sandwich.

And it was the kind of thing where it was one of those, everyone asking, how do you make this egg salad?

They could tell it was different.

And I was like, wow, okay, maybe there's really something to this egg salad.

And of course I used to serve it at my deli too.

So I knew there was like a following, but

I hadn't served it to like a public group of people.

This was like 80 or more people.

I hadn't done that since I had a restaurant.

So I've had some distance from serving egg salad.

And then also I brought it to a farmer friend at the farmer's market.

And at first he's like, Oh yeah, I don't even really like egg salad.

And I was, but he had been asking me if I had make anything with a lot of protein.

So the next week when I came back, he was like,

this is my favorite egg salad of all time.
