It's storable pretty indefinitely as long as you keep it away from bugs, moisture, and rodents.
And so that's why we package it in those buckets.

You can make bread with it.

That's hard because people ask me that all the time.

Well, there's a lot of differing opinions, but from my studies and I've talked to universities, oxidation begins as soon as that flour is milled and those nutrients are exposed to the air, just like you cut an apple and it starts turning dark or an avocado with oil starts turning dark.
