And most crucially, she served it with a special crispy chili sauce.
But she started to notice something important, and it was that the chili sauce was the thing that kept customers coming back.
One day, she hadn't made any.
Customers didn't actually want to eat her noodles without it.
So it was a rather damning verdict on the noodles.
But customers also asked if they could take some of the sauce home.
Up to now, she hadn't charged for the sauce, but now she had an idea.
She started making jars of it.
other local restaurants started buying it and serving her chili sauce.
And then in the early 90s, a highway was built in the area.
