Well Kevin Demers from Montreal is an absolute authority on the subject as he made the jump from juggling bartending and professional Ice Hockey to opening his own bar, The Cold Room 5 years ago. The lessons he learned enabled him to follow up with El Pequeño and Parlement shortly after, giving a hat-trick of Canada's best bars.
