I agree. When I was a personal chef, I grilled all the time. I spent many afternoons grilling at people's houses outside, especially. And, you know, today we're talking about what we're calling weeknight grilling. And I think there's a little bit of a lie about weeknight grilling because I do think grilling can be a lot more involved than people really think. There's a lot of promise. In food media and also on Instagram, of oh, I just threw all these things on the grill and look at how it turned out when it really did take several hours.

I think that it depends how you approach grilling. And there's such a spectrum. And I think there's also, like you said, there's a lot on social media and on in magazines. And certainly if you're using charcoal, there's almost nothing you can do in 30 minutes or less because you have to get the heat going. If you have a gas grill, that's a little different. And all the recipes I'm talking about today are things that I have made on an actual grill pan because I have been in situations where I don't have a grill. Grill, but I want that grilled experience, especially in the summer. So I think there's so much flexibility. If you're the kind of person who just loves grilling and setting up your charcoal grill.

Great. And if you're the kind of person who lives in an apartment and has no access to outdoor space and still wants grilled dishes that are pretty simple and approachable, I think both of us have that in mind. We also did an episode that we'll link in the show notes about to grill or not to grill where we go in more depth about all these things.

Well, Sonia, I just want to add that I really value the perspective that you brought when we talked about to grill or not to grill, because I used to grill a lot on gas grills. There was rarely a time when I was building a charcoal fire. I think what you really reminded me of is the value of an indoor grill. And I have one of those. It's a griddle on one side, which I use all the time for quesadillas and warming up tortillas and all the other things, but on On the other side, it's a giant grill. It just reminded me that I could just turn that over. I love it when you offer these ideas because it always helps me see around that I have to take everything outside and heat up a gas grill, which takes, you know, a good 15 minutes or so.

I also just think the one thing about grilling with a grilled pan indoors open your windows, turn on your your hood, turn on the fan. It gets a little smoky, but to me that's a small price to pay. So in the summer, I'm eating more salads like many of us.
