We flew in last night, and he insisted that we go on a 10-mile run at 5 or 6 in the morning. And then I said no. And then he said, yes. So here we are. Ready? I just still don't know why I'm doing this. Seriously, I don't. I said no like three times.

This is why he gets paid the big bucks. All fat. Now he's going to show us what the inside looks like after you cut off that exterior bark. Should be lighter and ripe, but still kind of dark with that dry age.

I'm stepping in for a second. I'm going to do my best to try to take off this fat. Start ripping it, tacking it just a little bit. Just go all the way down. He's trimming down a giant fillet right now. And right now he's taking off what's called the silver skin. Oh, I like that trick. This guy knows how to trim steak. I gotta give him food. Let's watch.

Trimming off the ends to give us a perfect chateaubriand. That's a clean, even piece of the tenderloin. A filet mignon would be if you cut right here and took one of these pieces. Oh, my God. He knows how to captivate you when he's cutting meat. He knows how to captivate you. So he's trimming off the meat now with some pretty heavy machinery. But look at the gloves he's wearing.
