Gareth Mullins 0:17
We do, yeah. We've a couple of uh couple of real American recipes here. First one I'm gonna do is crispy chicken wings with crozier blue. That's a little bit of an Irish nod to this one with uh a crossier blue creme fraîche.

How do you make oven‑baked crispy chicken wings with a crozier blue dip?

Gareth Mullins 0:27
So chicken wings are quintessentially the most American uh dish I think you can especially when you're over there. So this one uh we're gonna cook them in the oven. Uh you need sixteen jumbo wings that I want you to join. So you're just gonna split the the smaller piece away from the bigger piece to The butcher will happily do that for you. The seasoning is quite important. So it's three tablespoons of plain flour, a teaspoon of bacon powder, which is the magic ingredient here. That's what makes it go nice and crispy. A teaspoon of smoked paprika, half a teaspoon of cayenne, teaspoon of onion powder, and a teaspoon of salt and black pepper. Mix all that together, toss the wings in there, leave it for about 15 minutes, and then you're gonna lay those wings out on the water.

To uh your tray that goes into the oven like your grill tray, so they're elevated up off the tray. Preheat your oven to 180 degrees, pop them in there for about thirty to thirty-five minutes. They go super crispy, uh really delicious. I love to serve them with a crozier blue cheese cre crème fraîche. That's a hundred grams of crozier blue, hundred grams of creme fraîche, good squeeze of lemon, little bit of salt and pepper. You don't need too much salt because the cheese obviously does the hard work there. And And uh little bit of celery that you peel, cut it into batons, pop it into iced water, that's make sure that it's nice and crunchy. A classic American uh uh chicken wing.

Okay, now you want to make a burger, but not a beef burger.
Gareth Mullins 1:43
No, we're moving away from the beef burger this time. I'm doing occasion buttermilk uh chicken burger with crispy slaw and ranch sauce. So all the American classics here. So eight chicken toys, and I know a lot of people aren't crazy on chicken toy, but they really hold much more flavour. You need two hundred m gr mils of buttermilk and a couple of cloves of garlic, marinage or uh chicken toys for four or five hours in the buttermilk and the garlic. What happens here is the acidity in the buttermilk actually tenderizes the chicken. Then we need a seasoning. So this time we've 200 grams of flour, teaspoon of smoked paprika, teaspoon of dried oregano, quarter of a teaspoon of cayenne, salt and pepper, and again some of that onion powder.
Gareth Mullins 2:25
All you're gonna do is marinade your chicken, then you dredge your chicken through that seasoned flour, and then it goes into a fat fryer. So it is American Rheed. So you kinda really need to deep fry these set your farm So you're

a air fryer, not not for You
Gareth Mullins 2:38
can do it on an air fryer. If you're doing it on an air fryer, put a little bit of piece of parchment paper on the bottom and I drizzle it with a little bit of oil, then sit them in and drizzle it with a little bit of you need the oil you see to get the to get the flour coating to go nice and crispy. Or if you haven't got a fat fryer, you can do it in a little small pan or a white based pan, about an inch of oil and shallow fry them. For the country or the crunchy slaw, half a head of cabbage, a couple of carrots. Grated, one onion finely sliced of mayonnaise, salt and pepper, and very quickly the ranch, two hundred mils of mayonnaise, two hundred mils of sour cream, clover garlic, bit of parsley and chopped dill, some lemon juice and tomato ketchup.
Gareth Mullins 3:17
