So remember, we have an FDA now which regulates nutrition standards.
And that means everything from literally from farm to table and the cold chain of storage from farm to table, right?
So milk at the farm has standards for how the cows are kept.
If one cow has an infection, that could be passed around from the milking machines and so on, blah, blah, blah.
So those standards exist now, but they didn't.
And dairy was really susceptible.
So there were farmers that were augmenting milk by just adding water, adding chalk.
One guy was adding pond water, and you could actually see flagellum and worms and shit in it.
And people were getting, yeah, flagellum.
That's cheating.

So basically, dairy, it was really a big, big problem.
And then you had guys like Upton Sinclair writing books like The Jungle, which is about how fucking gross some of the meat processing was.

Cheese was fairly affordable.
