And the cheese, you come in a giant wheel, they cut it.

And so what Kraft did was he added alkali salts, which is kind of sort of what they did with Conrad Van Houten did with chocolate.
But he added melting salts, actually, and he created this really smooth consistency that was a blend.

And what he would do is pour it on a table, and he was able to get small slices.
Now they're pre-sliced, they're pre-packaged, they're shelf-stable, they travel well, so you could just have that one slice of cheese without having to ruin the whole wheel.
