Quintessential, one pan to rule them all, something that you can do anything in from an omelet to searing a steak, right?

So I love equipment like that that doesn't just have one specific use.

And don't get me wrong, when I had to work brunch service, I hid a couple of pans that were only for eggs.

But aside from that, one saute pan that I would use all

All service long, no matter what station I'm working.

I have my professional one and I don't recommend people buy them for home because they do require a little bit of maintenance.

And that is blue or black carbon steel pants.

I love them.

They're thin but heavy.

They distribute the heat evenly across the entire surface.

So you're not gonna get hot spots, even heat.

And that's the thing.

When we're talking about these pieces of equipment, there's some quintessential characteristics that we're looking for.

And for saute pans, I'm looking for heft, even heat distribution, even searing, and for me, blue or black carbon steel, that's it.
