Um, and then we've got a lovely salad there, sort of radish, mange tout, sesame seeds, lettuce, and spring onions. voice-verified

We've got lime zest and juice, miso, chili flakes, garlic, and we mix that really well with some butter. voice-verified

And then what we've done is gone down the back of the chicken and taken down the the backbone. voice-verified

And then you flip the chicken back onto so the breasts are up and then you squash it down and then literally lightly lift the skin off the back of the chicken and then put all of your marinade underneath the skin of the chicken. voice-verified

Because it's spatchcogged and flat, it cooks a bit more evenly, and then you get this lovely roasted skin, and it also cooks quicker. voice-verified

We marinate for about two hours, then it cooks in the oven for about an hour and a half, and then we finished it with this crumb of chopped parsley, chopped fine chili, and some fried onions that you can buy in electro. voice-verified
