So, pre the pub, I asked my now partner, Oisin, what were all the myths busted and...
What were the truths?
And he said, look, it's going to take an hour.
We don't have an hour, so I'm going to top line it for you.
Basically, it starts with obviously the beer coming in.
And then you need to let it settle and you need to bring the temperature down.
Really, I mean, slowly, but I mean, it takes a couple of days.
So it will come into the sort of corridor.
I mean, we sell a lot, so we've not got enough space.
So it's everywhere.
Every door you open is there.
It sits in the corridor, comes gently down.
Then it goes under the street in the sort of old caves in there.
And then it comes down.
That's all chilled.
That comes down.
Then it goes into the cellar.
So about two days later.
