And also if you get a big rain, the sugar beets will soak up a bunch of water and your sugar percent will go down.

So you don't really want to have a big rain right before harvest, but like you need rain because then they'll grow and they'll compensate for sugar later on.

So if you have a drier year, typically less tons, but higher sugar percentage.

So the agronomists pick the beets and then they can do samples and kind of keep track of where the whole crop is.

But then when you harvest the beets and bring them in in trucks to the piling facilities, they take samples and then they can send those to the lab later on.

And they have to process a lot of samples to get the sugar percent.

And then you get paid depending on that.

That's a great question.

So a lot of other places in the world, for instance, like in Europe, they'll start and kind of spread out the harvest season, where for us it's just two weeks of madness during the main campaign because we do –

A stockpile storage.

So we're refarming North Dakota.

It's freezing cold.

And that's one thing when it's like negative 20, negative 30 in the winter in December for us.

That's awesome because we put our beets in piles and we put like these culverts with holes in them under the piles.

And there's these fans and we turn the fans on.

Well, we don't manage this.

The co-op does all of it.

And then it pumps all that freezing cold air into the beets and it freezes them rock solid.

And then throughout the winter, the beets are processed at the factories.

The goal with producing and growing sugar beets is that American Crystal wants to maximize the amount that they can process with their factories.
