So you kind of have to plan your evening around locking these up.

Yeah, so I'll show you basically.

The eggs are now in the shed gathered, but they're not graded or anything.

I'm just going to load them into the van now and bring them up to the grading shed.

This is where you have all my packaging, my blue trays, the empty 30 trays.

To the left you see the grading machine.

So if you walk over, this has a little light which I'll show you now.

There, so you put your eggs here.

and then it'll do an x-ray vision you can see you have to turn down the lights but you can see through the eggs it's like an x-ray vision of the eggs you can see if there's any deficiencies in the eggs and then they roll on out so it'll put all your eggs into weights and then this is the stamper that's kind of it and then you load them so you load them out of the van put them in here do that load them back in the van and go and supply go and fill the machines

Let me go back to the house and you're going to tell me a bit about... The cookbook and what I'm doing with that and stuff as well, yeah.

Yeah, a year and a bit ago.

The reason why I said I'd write it was because here, growing up on a free-range farm, we were eating eggs every day.

And I suppose I just got curious, like, what more can I do with eggs?

So when I started doing little tarts and quiches and stuff, and I said, why not put this into a book?

Yeah, so I had a friend from school in St Pat's who sadly took his own life and I stayed very close with his family and I wanted to do something to help or to raise awareness for suicide.
