So if you walked into a bar in eighty five and asked for a whiskey sour made with fresh lemon juice, you weren't being a snob.
You were literally asking for a favor and people might look at you like, why are you being a pain in my ass?

Freshness and balance were totally niche and shortcuts were the default.

Meanwhile.
Something very different is happening in the kitchen.
Now it's the seventies and eighties, and you get this major culinary shift happening in the United States.
Specifically in California, there's a woman by the name of Alice Waters at Shea Penice in Berkeley.
She's building menus around fresh.
Local seasonal ingredients.
And by the way, this is the birth of California cuisine.
Maybe you've never heard of California cuisine where you're at, because you live in California, but out here in Minnesota, when they had California Kitchen or California this or California that, it just meant that you were getting something different and fresh, different than everything else you've been kind of having at the time, right?
