The 46-year-old New Zealander joins from Super Rugby side the Highlanders and will take over from Jimmy Duffy, who's departing at the end of this term.
A loose head prop during his playing days, Dermody earned three caps for the All Blacks, including one against Ireland back in 2006.
He retired in 2012 and began coaching two years later with Southland in New Zealand's NPC before linking up with Jamie Joseph at the Highlanders on a temporary basis initially.
