Anyway, um what I learned while doing the the few little bakes of bread that I've done in my life is that when you cook bread yourself, baked bread yourself, um, you have to eat it the day that you make it.
Because the next day it's rock hard.
Yeah.
And the next day it's inedible, inedible.
And it gets no preservatives in it.
Well, exactly, exactly, right?
So either we live in a world with no preservatives, and the bread that you buy at the shop lasts one day, and it's rock hard the next day and covered with mold on day three.
Or you accept that actually it's really, really good that we've managed to create this thing that's basically the same as as how.
Having your fresh bread on day one, but for like seven whole days.
Yeah.
Six months, some of it.
I think there's a there's a spectrum of this stuff.
But like even your sort of OT brown, sort of really lovely bread that sort of looks all homemade and all the rest of it that you buy in your poshest supermarkets, if it lasts more than one day, that's got preservatives in it.
