But at the time Atanas was trying to get his business off the ground, none of that seemed to matter.
American consumers had already conflated strained with Greek.
You can imagine how he felt about that.
Right.
Meanwhile, creaminess comes from fat content.
It's more about a smooth, silky texture and mouthfeel.
The Bulgarian yogurt that Atanas makes is creamy, but not thick.
It's actually very delicate and a little wobbly.
It's sort of between a solid and a liquid.
Now, the thickness of Greek yogurt was a huge selling point when Chobani hit the market.
It launched at a time when Americans were becoming more concerned about sugar.
Greek yogurt felt indulgent even when it wasn't sweetened.
So it could have no sugar and no fat, and people would still eat it up.
Dan and Sud followed suit with their own Greek yogurt brand.
Now that's another thing that ends up helping Greek yogurt.
It's high in protein.
Now, when Chobani hit the scene in 2005, Greek yogurt was less than 1% of all yogurt sales in America.
Today, it's more than half.
And in the past few months, there's been a boom of Greek frozen yogurt shops right here in New York, with lines out the door and the requisite influencer videos of said lines.
