His argument is, is that when you put fresh water onto a fish, it's osmotically improper.

And so the fish absorbs water and therefore, and what I think he might be right also is that you're enhancing.

So if you store your fish on ice, for instance, there's like a, there's like a wet zone there where bacteria can thrive as opposed to if the fish dries out tacky.

We all know what, quote-unquote, dry fish looks like.

If you've ever done fish storage high in a box with minimal or some but minimal circulation, you know what I'm talking about.

Fish gets a particular look where the mucus dries.

But it's not bad.

Water goes in.

But what if you use saltwater in it?

Or just go down to the ocean and pick up water.

I mean, the restaurant's like five minutes from Bondi Beach.
