Like there's a lot of good things about anchovies and they are just delicious and sauces and dressings.
They also go really well with lamb.
So if you're doing any kind of lamb stewing thing.
A few bits of anchovies is great.
They're really, I adore anchovies.
So again, just you're making a nice emulsion.
You've got your egg yolks, some Dijon mustard, some garlic.
You mush in the anchovies as well and then season with a lot of juice, lemon juice, and then drizzle in your olive oil while you're whisking away.
And this is a really punchy dressing.
The lemon, the anchovy, the mustard, as well as the garlic.
And especially if you have lovely bitter leaves like chicory, radicchio,
all those really kind of intense flavoured, they can stand up to this dressing.
You know, like if you put this over iceberg, you'd be like, ugh.
But things that are kind of bitter, they go beautifully with this kind of dressing.
