Western medical journals, you know it and I know it, have higher rates of cardiovascular disease, stroke, Alzheimer's, dementia, cancers, a variety of cancers. That would make sense to think about the quality of your food by reducing processed and ultra-processed foods, which on average have lots of more chemicals than more natural foods.
But it's not necessarily because of the chemicals. It's not the chemicals.
Well, it's a variety. It's the macros as well. It's the low fiber. It's the oils that potentially could be more harmful.
Processed, ultra-processed means that the food has been treated in some way. Cutting it is processing it, right? So like there's some degree of processing.
So why did you say ultra-processed?
I want to see your definition of ultra-processed. So for me, ultra-processed als Beispiel würde es ein Doritos-Chip sein, etwas, das man in seinem eigenen Zuhause nicht machen kann. Das ist einer der Aspekte von Ultra-Fast-Foods. Das bedeutet nicht, dass die Chemikalien nicht schädlich sind. Wir wissen, dass viele der Chemikalien, die in diesen Füßen sind, nicht nur die Größe der Stemmzellen erhöhen können, die sich in Fettzellen verändern und sie richten. Aber das sind alles Hypothetiken.

Aber ich möchte, dass Sie wissen, dass die Chemikalien, die in einige dieser Füße verwendet werden, spezifisch nicht benötigt wurden, um Testungen zu machen. Und die Testung, die gemacht wurde, wurde von Organisationen und akademischen Zentren gemacht, die wählen, diese zu schauen, um zu sehen, wie sie sich beeinflussen.
Was die Ernährungstests in meiner Erfahrung gezeigt haben, ist, dass, auch wenn man diese ultraverarbeiteten Füße in sinnvollen Mengen konsumiert, was sehr hart und kaum möglich ist, weil sie produziert werden und sie deinen Körper schützen, aber wenn du in einer metabolischen Wartung kontrolliert bist und ultraverarbeitete Füße gegeben wirst, bleiben deine Ergebnisse im Grunde die gleiche.
Das ist der Grund, warum ich denke, dass die Chemien nicht der größte Faktor hier sind.
Also, ich würde mit Ihnen aufgrund vieler Literatur auf die Qualität der Futter nicht unterscheiden. Und übrigens, nützliche Nahrung ist so ein wichtiger Aspekt der menschlichen Gesundheit. Denn wenn ich über die Entfernung von wirtschaftlichen Chemikalien spreche, wie du es bestens kannst, in Ordnung, spreche ich auch über die ADD, die vier A's, die ich in dem Buch diskutiere.
Assess, avoid or swap. The third A is add, which is the nutrition that humans are not getting over millions of years that we are deficient on, which I would hope you would agree with. Vitamin D, Magnesium, some of the B vitamins. Because we're not eating them. Exactly.

But here's the thing. These chemicals have also been shown to affect DNA methylation, which is how genes are expressed, the epigenetics of our genes. I mean, we didn't get into more mechanisms, but I'm happy to go there. I think epigenetics is out of your scope.
The idea that we are also exposed to chemicals that can affect gene expression is something that should really be looked at hard and fast. We have a lot of data on this. So it's not just taking away triggers or components that could really irritate the immune system, the endocrine system. It's also how do we offset with certain nutrients that we know offset DNA methylation and epigenetic changes.
We know that.
I think I have a really good point for all of us to end on this exact topic. And that's currently our administration has been talking about making America healthy and all these statements by talking about foods, but our budgets to do all the research that you're saying is required. And I think we all agree is required. It needs to continue.
I've never said wait for Godot. You know, my argument has always been, listen again, back to precautionary principle. You can take red dye number three out and we can all clap. We have, six potential PFAS chemicals in our drinking water system that was put on hold from being managed in our drinking water system, which by the way only manages 91 chemicals since 1974, Safe Drinking Water Act.
