China's a big country, right?
But people are coming from the Southeast region initially, right?
People that came to build the railroads, for example, people that settled in Chinatown, they're from the Southeast.
So they're going to bring the culture, the language, a lot of the Chinese dishes that we know of, like egg foo young is not really Chinese, but even the wording of it is not like Mandarin.
It's more like closer to Cantonese.
