Because it's easy to cook.

Baby bok choy.

Love it.

Right.

And this is not a bad choice.

It's just when it comes to carotenoid nutrients, specifically picking on spinach, you're talking little tiny baby spinach leaves that have maybe been in the ground for three weeks.

And they've been in an environment that has been controlled so that the farmer can actually have them.

tons and tons of baby beautiful spinach leaves that people are going to buy in the box at the grocery store.

This is spinach that has been unstressed and it hasn't been in the ground long enough to produce these types of nutrients.

So it's going to have a substantially reduced nutrient content with regard to these sort of resiliency nutrients like carotenoids.

And so while it's not a bad choice, I would rather somebody eating boxed spinach from Safeway than eating Big Macs, right?

It's going to be a better dietary choice for a lot of different reasons.

It just doesn't have the same nutritional content as if you're going outside, picking spinach leaves off of a plant, bringing them inside.

That's going to have way more carotenoid nutrients.

And some people can do that.

but it's very few.

So when you're looking at these scores that you're seeing, it's not necessarily that people aren't trying, it's just that it's very difficult to consume a diet of rich in antioxidants like this.

The other thing is that the longer the carrot or broccoli or whatever has been without its mother source, its root source,

So if you think about it, these antioxidants are produced so that the plant can be alive.

Once the plant is picked, it starts to compost, right?
