I've had to ferment my own chillies, garlic and ginger because I go, because, you know, chilli oil is so nice, like with the proper whatever, it's got the rayu sort of madness.
I mean, that is so calorific, it's wild.
So I buy the fermented stuff, but that's about £8, £9 a pot.
