acidic which is nice and sharp too and sweet at the same time so with this dressing I put a little touch of honey three parts as I say olive oil one part vinegar red wine vinegar is perfect and then you put your handful of raspberries and you blitz that up just in a little Nutribullet is perfect I use a stick blender which is perfect and then keep that in the fridge normally what happens Clare it separates so all you do you can hear that on the air you just shake it together and bring it back so it's okay if it looks separated in the fridge that doesn't mean it's gone

And then serve it at room temperature and just give it a shake or you can re-blend it again and drizzle it over your salad.
Sometimes what I love at home is salad leaves, some strawberries and some lovely Irish goat's cheese just with a little touch of balsamic which works really well with strawberries in particular.
It really is.
What we do, we put a little touch of vanilla and we put creme de cassis.
What's creme de cassis?
It's a liqueur made in Dijon in France and it's made with fruit, so it is usually black currants and it's delicious.
So it's low in alcohol, high in fruit.
We put in our fruits.
We use 60% fruits to 40% sugar, if that makes sense.
