You take some of the outer leaves off.
Not all of them, because you want to eat them.
Just the first outer leaves.
Just like that, so you see the heart.
And if I was deep frying it, I wouldn't take any more.
Then I would peel all the stalk and then cut it to there.
If I was doing them a la grec, I'd peel all the stalk and then cut it into lozenges and then cook them in that a la grec liquid.
So we've got our little board here.
So we cut our root.
We'll cut straight through it.
So you see, there's the little heart there.
They are beautiful, aren't they?
Very beautiful.
But where you have a globe, the heart is much, much bigger, whereas here, so you'd eat all these little leaves here, the stems of them.
Not at home, but I might do now.
I might do them this weekend, who knows?
