And then he will put some new oak on it.

So the texture of that is just pretty insane.

I love that Pinot Gris.

I would age that one for quite a while where I wouldn't age the lighter expressions.

I mean, it is in that there's no oak.

Lights.

And you don't have that tertiary character and it's lighter and fresher and brighter.

And the texture is leaner.

Whereas like the viscosity of some of the Alsatian wines and the alcohol, like, woo, you get one glass and then you're like, all right, that's a winter white for some of those Grand Cru Alsace wines.

I don't think so.

I think what matters more is the vine age.

Okay.

Because...

If you're planting, if you have old vines and you have lower production, you're just getting so much more concentration to that fruit.

And so you're looking for producers who are either they have old vines or they purchase old vine fruit.

Irie, Bethel Heights took out their Pinot Gris.

It was so good.

Now they're focusing more on Chardonnay.

But people who have old vines or people who are a bit, actually a bit more south.
