Why didn't you hit targets?
It was put in front of you.
It was the first place I've ever worked in that they were so open and honest to say, well, this is your target for next week and you have to hit X amount.
And if you don't, you know, there's a reason.
So it was all very transparent, but it was nice to work in an environment like that where
I go up on a Friday.
Yeah, yeah, yeah, yeah.
But you do, I think if you're invested, which I was, I would have been heavily invested in Fallon and Bourne.
It was just an amazing place to work.
What year would that have been?
2012.
But it's really personal as well.
I think if you're going to buy something or even make something, you know what I mean?
It's an extra, instead of the good old bottle of wine that you bring.

that explosion of pastry shops and that's not going anywhere I don't think no and you just look at the scene in Dublin at the moment it's just booming there's bakeries now I get that there's one's closings as well but there's a huge range of like really really good amazing bakeries world class bakeries and when it comes to pastry obviously the one thing everybody always says is that
The way my brain works is everything is weighed out and I have folders and I have recipes and that's just the way that I work.
But I remember standing beside my mum when I was a kid on a stool.
It was a thing as a weighing scale.
It was a handful of this and the bread worked out every single time.
