So that confuses me to this day still.
I don't understand how my granny and my mum could just whip it up or I would be very much.
I think when you manage a kitchen brigade, which I've done over the years quite a bit, you know, you need to be able to build a repertoire of recipes that you can stand back and then you know that it's going to work.
So I think from years of working in kitchens.
but also making one loaf of bread and making 60 loaves of bread if you don't use wine scales yeah it's completely different yeah like I would do a lot of product development for companies as well that's part of the new role that I'm doing and a lot of people think well it's just about we'll just multiply that recipe by 100 it doesn't I wish see that works out for you
Yeah.
I think it's confidence as well and I think it's... You have to make mistakes.
You have to continue to realise why...
this didn't work out or why that didn't work out.
So you have your recipes all lined up.
But it's also a confidence thing.
Over years, I would become, like anyone in a job of yours, you become more confident.
So you're able to do it a lot faster.
And you know by looking at it beforehand, if it's a bit warmer in the kitchen, the butter's softer.
So you know that you're not going to mix it as much.
Or if you're taking your eggs directly from the fridge, if you keep them in there, that's going to change the recipe.
So it's knowing all of those little nuances that's going to change a recipe on your... If you bake something and it doesn't work out, it's kind of taking a step back and saying, well, this is why.
you tell them that and they're looking at you agreeing with you and then yeah it only comes with experience you can't no you can't force that process and that's practice I remember taking holidays once I went away for a week it was when I was after Fallon and Burn I moved out to Airfield Estate in Dundrum so I was there for six and a half seven years so I kind of ran product development there as well yeah but it was that was 94 yeah a lot of work done yeah
