recipe that we've been using since day one but one the lads in the kitchen had dumped the bicarbonate soda into the baking powder tub instead so they were just big green blobs in the oven every day and they were cursing me there I was having the best time ever on my holidays I know the place was erupting in Dundrum but little things like that and again it's you should know by looking at it but again if you don't have that experience you know it's those little things that'll trip you up What are you doing these days then?
No, 2022, I finished up in Airfield and then I went out on my own at that point.
Because I think working in restaurants and kitchens for so long, it's always the dream.
And everyone always says to you, you're going to open up your own place.
It's so hard.
And I've seen it firsthand working for other people and other places, how difficult.
So that never really has been my dream to open up my own place.
I just see that the stress and hours and everything you put into it.
And I was like, there's other ways.
It always something sticks in my head.
Mum used to say, do you want to be lugging pots around the kitchen when you're in your 50s?
And I was like, maybe, I don't know, but it was always there.
