I was like, maybe there's an easier, because my mum and dad would work very hard, you know?

so I invested heavily in that and that ran well for a couple of years so there was still that kind of need for a lot of people that wanted to learn as well how to bake so I was running that on the side and then my consultancy business so I was doing a lot of consultancy work going in with small producers and helping them upscale to get into supermarkets and that so I was working with Simply Better and Dunn Stores for a while with that which was really good and
eye-opening as well like you've got so many different avenues yeah yeah talent like to be able to you know as you say like the retail end of it and the commercial i think years ago when you went to college it was like you're you can just work in a restaurant or you can work in a hotel that's it where there's there's so many other different avenues now and but then i went back to college in 2024 so i'm back to minneapolis university and done a hdip in further adult education so i now i'm now teaching so that's the

Yeah, so that's the, and it's part-time, it's not full-time, but I'm in there doing probably, they're flexible with the schedule, which is good because when you have so many moving parts kind of going on, it's nice to say, well, I'll take April off, but I'll kickstart again in May.
So I do a lot of international cuisine, pastry, bacon, desserts, culinary techniques.
And then I was covering full-time for one of the lectures, September gone.

No, you're following their... No, it's a QQI level five qualification.
So you have to follow it.
And like, it's like, you know, there's now, is it a douchess or douchess mutation?

Even the pastry course there, the last day we had, I had a group in and I was teaching them how to make soufflés.
