our recipes around some sort of technique.
This one wasn't as much of a technical challenge as it was about introducing some of our Bake Club members to a different taste profile or a different texture profile.
You know, butter mochi, as a cake, it has a very unique texture.
texture that is completely unlike any cake.
It is a very chewy cake.

It's like squishing.
I want to say it's like squishing down on very soft like toasted milk bread.
But that also feels a little esoteric.
Yeah.
It's almost like bouncy on your tooth just a little bit.
And then it slips down your throat in this very satisfying way.
I wrote this down, and I think it's a little esoteric, to be honest.
But perhaps the closest textural...
would be like a farbraton, which is a classic French pastry.
And sort of like a clafoutis, but it basically has no crumb and it's also quite chewy.
Anyway, butter mochi is just incredibly soft and chewy and has a really fun texture.
I liken it, I think of it as like the gummy bear of cakes.
Yeah, that's good.
