And I just felt like this was a moment for our bake clubbers to experience this.
This might be one of our easiest recipes ever in many ways.
It's quite simple.
You start with the star of the show, which is fresh summer corn.
I did also test this with frozen corn, and it was perfectly fine.
But, you know, it's August.
You strip the corn off the cob, get them in the blender, and you whiz it all up with eggs, melted butter, a can of sweetened condensed milk, regular milk.
There's salt, and there's a little bit of vanilla as well.
And then once that's blended, you pour it into a bowl, and you fold in the other star of the show, I suppose, which is glutinous rice flour and a little bit of baking powder.
And then you put this in a pan, and about 3 quarters of the way through baking, I add a coconut topping that's made with coconut flakes, sugar, butter, and a splash of milk.
And then the final cake comes out.
You know, after it's fully baked, it comes out with this crunchy whale of caramelized coconut on top.
And when you cut in, it's like this nice golden yellow inside.
Yeah, it really is.
Yeah, it's a really tasty cake and it's a fun texture.
It's fun to make.
It's not a looker.
You know, it's a very plain looking cake, I will say.
It's understated.
