You know, there's two men with huge, like, wooden, I think, hammers.
Yeah, and they pummel this rice into submission, and they make these chewy shapes out of them in the end.
And then the sticky rice, you know, once it's pounded into this paste, it's really chewy and soft and moist.

Butter mochi.
It's a completely different beast.
And there's, like, lots of different origin stories, you know.
It is usually attributed to being a Hawaiian thing.
It's almost always called the Hawaiian butter mochi because it is very popular in Hawaii.
And many people believe it was brought over by Japanese immigrants to Hawaii, you know, the process of making mochi.
And then from there, sort of built into this...
dessert made using shelf-stable ingredients like sweetened condensed milk or evaporated milk.
Some people also believe it has some sort of connection with Portuguese and Indian desserts.
Oh, interesting.
Because they also have like a similarly chewy texture.
