I remember.
A bunch of us loved it.
There was one person amongst our tasting panel in the test kitchen who said that the coconut may be possibly overpowering the corn.
So I took that feedback to heart, and I went back.
And the same tasting, somebody suggested, oh, why not try it with cornflakes?
And I thought that was a brilliant idea.
Great, let's try it with cornflakes instead of coconut, using the same methodology.
You know, you melt the butter, melt the sugar, add this cornflakes salt, pour it on top of the cake.
It just did not work.
Yeah.

They sogged out a lot because it's all about timing.
You want to get the topping on after the mochi has set just a little bit so it doesn't sink all the way to the bottom.
Because if you put it – that's also the reason why I couldn't put it on right at the beginning when there were some suggestions made.
Why can't you put the topping on from the beginning?
But it would just sink to the bottom and you would lose the crunchy topping.
So I knew the topping had to go on halfway or a little bit more than halfway into the baking process after the top had set.
And when I did it with the cornflakes, when it went on at that stage, there was simply no purchase almost.
They just sat on top.
