hot cake in a hot pan and you're getting this hot topping on there and you're using a spatula to spread it out and at times it's like oh it's never going to cover the surface but it will so in that moment there really isn't anything that you can do besides like take your time like really once that cake is sort of set it doesn't deflate as much and it isn't going to hurt the integrity of the crumb if you take an extra five minutes to spread the coconut topping
on there.
So it really is just a matter of taking your time to like go all the way.
Yeah, it's not, you know, it's not like a Genoise or a sponge where a moment is going to kill it.

I think the fun thing to point out is Katie and Mark used two opposite types of coconut flakes.

Mark used a very finely shredded coconut flake and Katie used more like coconut flakes.
Yeah, yeah.
Almost.
And I call for coconut flakes in the recipe.
You really can use whatever kind you have on hand.
I did notice, though, that sometimes using super finely shredded coconut or extremely big flakes of coconut sort of change the way it adheres to the topping.
