Well, I did test a lot with a 9-inch.
You did test both.
You tested both, yeah, I remember.
Yes, I tested both.
And in a 9-inch pan, it goes progressively faster.
In an 8-inch pan, I think that could explain why it felt like it was getting brown on top but perhaps still runny or jiggly in the center.
The thing about mochi cake is you can actually not really overbake it unless you're completely negligent.
And unless you like leave it for hours, you really can't overbake a mochi cake.
So unlike my advice on almost all other cakes, I would say for a mochi cake, you can err on the side of overbaking rather than underbaking.
So that's my response to the whole baking texture.
And, you know, should I have let it bake a lot longer?
No, I would say you almost can never overbake a mochi cake.
And what is the other question there?
