Well, these mediocre plums, Carrie, turned into one of the best batches of plum jam that I've ever made.
Who knows why?
It's like the kitchen gods were there with me.
And whatever reason, once cooked, they became flavorful and they were tart.
And I intentionally didn't add too much sugar because I don't like it too sugary.
And it really almost became like
plum jelly because these plums had so much pectin naturally so i made this jam and i was looking at it and i was like what do i do with this it's kind of like a jelly and i was like ooh this would be good in a crumb bar and i was thinking about your crumb bars that you made earlier in the year with rhubarb and strawberry and you made a really oaty crisp there was like a texture right
was like, I was thinking of your crumb bars.
And I was thinking...
Oh, one of the things that I think Carrie and I really share what we want in a crumb bar is that tart flavor.
And you really get that from rhubarb and strawberry combined.
And you also get it from a tart plum.
so I was like, yes, I want that tart flavor.
But my grandmother's crumb bars were never oaty.
There were no oats and sipes.
So it wasn't even like I would... The other recipe I've been working on for years is a sour cherry marzipan crumb bar.
And I've made many versions of that over the years.
That also has no oats.
