So I think second to tomatoes, maybe corn is at the top of everyone's farmers market list.

Yeah.

Certainly at our farmers market they sell out quick.

When the f corn shows up that first week, you have to get to the farmers market early.

I have to be honest, which is that a grilled corn, a simple buttered corn is almost always what I'm doing.

But last summer I discovered Andy Baragani's recipe for this coconut cream corn and it reminded me how much I love the combination of coconut and corn.

And so this summer I really want to embrace those flavors even more.

There's this Deborah Madison coconut corn recipe that's just

incredible sounding.

I love her vegetable recipes.

This book, this recipe is from a book you gave me called Vegetable Literacy, which is an incredible vegetarian cookbook.

I mean she really is one of the most prolific vegetarian recipe developers and has paved the way for many people.

So there's some Indian cooking techniques here.

You start with ghee, you heat up mustard seeds, curry, bay leaves, chili, and ginger in a wide skillet over medium heat.

You let them start to sputter and pop.

It doesn't take that long.

It takes minutes.

Then you add fresh corn, which you've just taken off the cob.

Certainly you could use frozen corn if you needed to, but fresh is what we're gonna do in the summer.

And then you add your coconut milk and you just let that simmer for five minutes.
