But as long as you have that base of fish sauce, lime juice, something to sweeten it with, that's an incredible dressing.
And it doesn't even require any oil.
It's just a marinade.
And it can kind of sit.
You can make it ahead of time.
It will only get better in flavor.
You can eat it immediately.
It reminds me too of that Anna Lewis recipe that I made in a cookbook club where she makes this lettuce salad, like a very simple salad, but there's no oil at all.
It's just a vinegar dressing.
And that is exactly what you just described.
It doesn't weigh it down.
So it is kind of a lighter approach.
And I think that's what we're looking for in the summer.
Yeah, but making a crouton with a saltine cracker is such a smart idea.
It reminds me of those, I think they're called firecrackers.

You season them right with all those spices and butter and then you bake them and a lot of people make them in the wintertime and give them as gifts.
And it's just so fun to take something so basic, so familiar, so comforting, like a saltine, and just do one thing to make it extra special and to crumble it with tomatoes.
That is such a great flavor combination.
